There are many varieties, which are not always equivalent to the sherries sold in Britain. The name given to each variety depends on the exact conditions of manufacture, such as the amount of yeast mould which is allowed to grow on the surface of the wine, and the blending process. The main types are: fino (very dry and pale), amontillado (dry, with a nutty flavour) and oloroso (darker colour, full flavour). A special type of fino called manzanilla (literally, "camomile tea") is produced only in the town of Sanlúcar de Barrameda, where the sea air is supposed to give it a salty tang.
